Drat. The dreaded last week of Summer before Labor Day. Sad face emoji. This drink is meant to lift your spirits before the ever-so-sweet Summer fizzles. Blended whiskey, pineapple, orange, lemon – please don’t leave us Summer. This cocktail will put you right back in the hammock, or on the beach or boat, or wherever you dwell happiest, barefooted, in the sweet summertime. And it tastes so good you’ll forget September is around the corner. You’ll maybe even imagine it’s still the end of June. Put your phone away and allow your imagination to transport you. If that’s difficult for you, have another until you’re mentally in June again. And take off your shoes. That helps. Do it. Before it gets dark outside before 7 and you need a jacket and a flashlight to make your cocktails. Laughing emoji. Lift your spirits. Literally. Cheers to Summer.
You will need:
2 oz. Cleveland Underground bourbon whiskey finished with black cherry wood
1/2 oz ruby port
2 teaspoons fresh lemon juice
1 teaspoon sugar
3-5 oz chilled club soda
pineapple wedge
orange slice
Directions:
- Shake the whiskey, port, lemon juice and sugar vigorously with ice.
- Strain into an ice-filled Collins glass.
- Top with club soda and stir gently. Garnish with pineapple wedge and orange slice.
